Emily's Potatoes with Broccoli and Cheese

My sister taught me how to make this. It is so good!

Emily's Potatoes with Broccoli and Cheese

6 - 8 potatoes (this made enough for 3 people)
1 tablespoon butter or margarine
salt to taste

4 cups broccoli (diced)
1/4 cup flour
1/4 cup margarine or butter
4 cups milk
2 cups cheddar cheese (shred)

Boil the potatoes until tender. When they are tender place them on a baking sheet. Cut a shallow x into each one and smash them slightly. Add butter and salt, and bake at 400*F until the edges are starting to crisp.

Steam the broccoli, or put it in a pot with roughly 1/2 cup of water and simmer it. If you do it the second way, just make sure it doesn't dry out. You can leave the remaining water in the pot and continue with the recipe.

In another pot mix the flour and butter together over medium heat. Add the milk and stir until it begins to thicken. Add the cheddar cheese and stir until melted. Add the now tender broccoli.

Pour the broccoli and cheese sauce on top of the potatoes, and enjoy!
