
Mushroom Gravy
1/4 onion (diced)
2 tablespoons olive oil
1 cup water
6oz portobello mushrooms (about 6 babies) (diced)
1 1/2 cups veggie broth
1 teaspoon salt
1 sprig rosemary
1/4 teaspoon pepper
Sauté the onion and olive oil until the onions begin to caramelize. Add the water, and allow to simmer until it is reduced by half. Add the remaining ingredients, and simmer until it reaches an ideal thickness. Optional: Blend half (or all) in the blender.
Mashed Potatoes
5 red russet potatoes (peeled)
water (for boiling)
1/2 - 1 cup veggie broth
2 teaspoons garlic (minced)
1/2 teaspoon rosemary (diced)
salt and pepper (to taste)
Boil the potatoes until they are tender enough to mash. Mash them up, add enough veggie broth to make them smooth and creamy, add the garlic, rosemary, salt, and pepper. Easy peasy.
